1 pkt of Little Lucifer Smoky Wood Chips HIckory and Mesquite
2 pork rib racks
1/2 cup golden syrup
1/4 cup apple cider vinegar
2 tsp sweet paprika
2 tsp freshly cracked black pepper
1 tsp cayenne pepper
1 tsp cumin powder
1 cup chicken liquid stock
2 tsp salt
What to do
Preheat your kettle to 160 indirect heat.
Place Little Lucifer Smoking Wood Chips directly of the lit coals and allow them to smoke
Place the pork ribs into a tray that will hold them both so they aren't touching.
In a separate mixing bowl combine all the remaining ingredients bar the chicken stock and mix well. Check the seasoning at this point and adjust if needed. Add the chicken stock and mix well before pouring over the pork ribs.
Place the tray with the ribs in it into your kettle and cook uncovered for 1.5-2 hours or until the ribs are tender and the sauce has thickened.
As there is a high amount of sugar in this recipe keep a close eye on it in the final half of the cooking process, you may have to add more stock until the ribs are tender and you are ready to reduce your sauce.
