Smoky BBQ Christmas Turkey Recipe


  • 1 pkt Little Lucifer Smoking Chips Savoury Herb Flavour
  • 1 medium turkey
  • 2 tbsp olive oil
  • 1 - 2 tsp sea salt
  • 200 g dried cherries
  • 1 cinnamon stick
  • 3 star anise
  • 1 orange, cut into thin rounds
  • 2 cups chicken stock
  • 1/2 cup port
  • 4 cos heads
  • 50 ml buttermilk
  • 50 g blue cheese
  • 1 tbsp Worcestershire sauce
  • Lemon juice, to taste
  • Salt, to taste

What to do

  1. Remove the wishbone from the turkey, if you are not sure how to do this ask your butcher to do it for you. Preheat your BBQ to a medium heat and add your Little Lucifer Smoking Chips, allowing them to smoke.
  2. In a large roasting tray add the cherries, cinnamon, star anise, orange rounds, stock and port before placing the turkey into the tray and drizzling the olive oil over the turkey and seasoning with the salt. Cook for approximately 2 hours or until the turkey is cooked to your liking. Allow to rest for 20 minutes while you prepare the salad. Depending on your BBQ and the size of your turkey the cooking time will vary.
  3. Allow the turkey to rest for at least 20 mins before serving.
  4. Remove the orange rounds, star anise and cinnamon from the cooking juice and decant into a gravy jug.
  5. Slice the cos into wedges before placing onto a large serving dish. In a small mixing make the dressing and check the seasoning. Place the turkey onto the centre of the dish and drizzle the dressing over the cos. Serve with cherry sauce on the side.
