Smoky BBQ Chicken and Peach Salsa Recipe


Little Lucifer
  • 1 pkt Little Lucifer Wood Smoking Chips Savoury Herb
  • 8 chicken thighs, skin on & bone in
  • 1/2 cup good quality BBQ sauce
  • 1 tsp ground cumin


  • 6 canned peach halves, drained & chopped into rough cubes
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • 2 garlic cloves, minced
  • 2 tbsp red onion, finely chopped
  • 1 1/2 tsp fresh mint, chopped
  • 1 red chilli, finely chopped
  • 1 tbsp pickled jalapeno peppers, chopped
  • 1 lime, juiced
  • 3/4 tsp salt, divided
  • 1/2 tsp freshly ground black pepper
  • 6 lime wedges, to serve  (optional)

What to do

  1. Heat the BBQ. Pierce the Wood Chip Smoking Pack  3-4 times with a knife and place on a hot part of your BBQ. Heat until the smoke starts to form.
  2. Mix the BBQ sauce and the 1 tsp ground cumin together. Brush over the skin of the chicken thighs.
  3. Season the BBQ with oil and place the chicken on the BBQ, skin side down. Cook until nice char makes form and then turn over and close the lid of the BBQ.
  4. Cook for another 20 minutes until the chicken is cooked through and nice and smokey.
  5. Whilst the chicken is cooking, combine all of the ingredients for the easy peach salsa.
  6. When the chicken is cooked, serve with the easy peach salsa and lime wedges!
